KILL THE WABBIT...

JUST TRY WATCHING THIS 1st






I survived the Wabbit "Rabbit" Practical. Okay that's it. Well it wasn't really scary at all, except for the preparation wherein you have to cut its head. Sadly I had to cut my station-mate's rabbit 's head. So make that 2 rabbits. Its eyes are just staring at you. ulk. Okay so i'm done with the rabbit part. I'm just really wishing that NO PIGEONS would come my way nor frogs. It's just not included in my food chain!!! PLEASE por favor. No more. But you know what, it was my VERY first time to finish FIRST. I was just so happy. I really made it so fast. I don't know. Anyway demo recipes were flavored custards and cold vegetable platter "GRECQUE" style.

Okay so anyway that's it for culinary school this week. Things are getting easy at Le Cordon Bleu and I think I'm getting comfortable with the process of cooking the french way. GRrr.. Okay so Friday night I was out with some of my friends. Toured a little bit. Finally. Im a student tourist. So earlier, I went to MBK to check out their stuff. It's like Platinum Mall + actual stores inside. This place is huge as well. So many tourists inside. I bought 2 shirts for 400 baht. Not bad at all. I went there Via BTS sky train from Saladaeng station to Siam Square. Just a little walk from Paragon. saladaeng station
Yesterday as well I played again some tennis @ Pang and Jeff's place, but this time Pang played with us. Good thing it didn't rain. The sky was so dark that day. I had a good match with Jeff. We played two tie breaks.

And you know what's the best way to cure nostalgia? JUST KEEP ON COOKING YOUR OWN FILIPINO FOOD! That really helped a lot. I did Sinigang na baboy without the Kangkong and Chicken Adobo without the pamintang buo. Kaloka! Pero okay lang. It turned out really great. I just really miss being a bum. Not. :))))

After this and that, I found this store YEAH! at Siam Square where they sell reasonable Marc by Marc Jacobs, and Y-3 stuff. The one at Chidlom is just too expensive. They import it directly from the US. Maybe Macy's? LOL. But the place was just AWESOME. Floating store platforms everywhere. :))))) Sadly I just bought a key holder for a reasonable price. So no harm done. :)

Quick Week Update - Le Cordon Bleu

Just a quick update on what's happening inside my school. So it's confirmed that a former Prime Minister's daughter also goes to the same school as i do. Yes. Oh god. And I know people here are very well off, but working in the kitchen in Chanel shoes is just too much. :)))) Confirmed. No, i'm not lying. ANYWAY... God this has been a happy week and tomorrow is another long weekend for me. Everything happens here so fast in Bangkok. Today is my 36th day here in Thailand. I'm kinda missing home. But must stay strong. :) Friends are coming soon! I just cannot wait.

Anyway we had a demo yesterday. It was Duck Terrine. Uhh, I don't like this stuff. I think I'm just not gonna make it ever ever ever.

This one is nice. We made this yesterday. It's Chicken Breasts stuffed with Ground Chicken Breasts. hahaha :))) I just don't know how you call this. But yesterday our facilitator was the Thai Chef Pruek. He's also an alumni of Le Cordon Bleu but he graduated in Paris. He is so calm. And yes he liked my cream mushroom sauce for my stuffed chicken. He said elaborately that my sauce was "VERY GOOD....VERY VERY GOOD". Okay anyway move along, I think he's my favorite Chef from now on. Less stress. :)))))


Chef Cedric filled up for Chef Arnaud yesterday. He had to use a lapel because he talks so soft. It was a special request from us.

HOLA!!! Gong Xi Fa Cai and Happy Hearts Day!

XI NIAN KUAI LE!!! IVE GOT NO ANG PAO!!!

Oh what a week I've been to. A lot of things happened this week and I'm just as glad as how everything is turning out here in Bangkok. Well sad to say... yeah I think I miss home. Being nostalgic isn't good after all. You miss the food, you miss the language, you miss the people you've been with half of your life and of course you miss "JAYWALKING" hahahaha... I arrived here in Bangkok on January 13 and I've been jaywalking the roads of Silom and Saladaeng for almost a month. Until they wired all of the main streets and what's the way to get to the other side??? Uhmm overpass. URGHH. Anyway who says im complaining.

So recipes for this week - RAW MEATS, Boeuf Bourguignon, Choux Pastry and a Salmon. Okay I really didn't know that French like their meat raw. Soft Raw. It's really weird for my taste because I'm Asian. The only thing I eat raw would be fish. But meat? I dont know. So anyway, we did roast a steak, a full slab of it for only 20 minutes just to make it Saignant. Cooked on the outside but raw in the middle. French like it. Don't ask me why... AND PEOPLE, there's no such thing as MEDIUM WELL. hahahaha It's either saignant (rare), medium rare and well done. Anyway I was on my degustation part, I was about to serve my beef. Cleaned my plate, garnished it and everything. When the chef took a look at the bottom of my plate there was BLOOD STILL. I said to myself "shitshitshitshitshit another mistake!!!!". I thought I was going to die, but then Chef didn't say anything. So I guess in France, it's okay to have blood juice on your plate when you ask for steak. I thought i made another mistake but oh well.

Second thing we did was the Boeuf Bourguignon. Oh my this is heaven. I saw it first at Julie and Julia and I just died when I saw how interesting it looked. We drenched the beef in wine and cooked the beef with its wine marinade for 2 hours. Beef has to be tender. It's tedious but it's worth it. It's just super super. Once you take a bite, you get a lot of flavors. The beef, the wine and the juices of the garnish. But since I'm Asian, I ate it with rice. :)))) Shouldn't be like that.

Okay this Salmon thingy was as easy. Good thing it's not raw. We had to make the skin crispy but at the same time make the meat pink or ROSE. The lemon chive butter sauce was good! But you can't have it all since it's all butter. I bet youd die the moment you finish all of it. We took home a cup of that sauce so imagine how much butter we used.

So that's how my school week ended...but you know what, We're not done yet. :)))

Friday night we went back to Khao San, but this time we were a little late. It was a good night. They played Don't Look Back in Anger - Oasis TWICE!!! It's all acoustic. Really fun. Oasis, Radiohead, Aerosmith, Beatles, Nirvana. They're just really fun. Everyone else were foreigners. So, no lost in translation at this time. I'll take my friends here one day. ::))) COME TO BKK! I MISS YOU GUYS.


AND LAST NIGHT we Welcomed Chinese New Year! It's my first time to celebrate chinese new year overseas. But to be fair, I think Ongpin is still in my heart. haha :))) Bunny came in her Cheongsam. But where the hell is my Ang Pao??? I miss machang as well and Hakaw and Lechon Macau! SIYET!



I miss The Philippines so much. Yey! haha I think I'll be back soon. :))))) Oh this morning finally I played tennis again at Pang's place with Jeff. They've got an awesome court. It's like you are flying around Sathorn and Yannawa. Everything was overlooking. Tall buildings everywhere and in the middle of a high rise, is a tennis court. Jeff and I played a 45 minute rally and tie break match. It was good!!!

Anyway that's it from Bangkok. Hope you guys are having a blast!!! Today is Valentine's and I'm alone. My movie scheduled event didn't push through so thank you Suka, Sili, Bawang at Luya you just made my day. I cooked Paksiw na Isda earlier. So i nursed a nostalgia for a while.

Bangkok High - Khao San and CHICKEN JUS

HELL WEEK. HELL HELL WEEK. Okay so you guys remembered my "DOUGH" week right? I think this has been so far my ruthless one. Culinary school is getting harder and harder. The highlight of this week is I think the Chicken Trussing SKILLZ. I think did pretty well with my chicken, I made him happy. But while I was dressing the chicken, WITH ITS HEAD ON, I unintentionally touched its eyelids and OMFG it was staring at me. It still has its eyeballs on. FUC***%#%$. Now i'm more scared because I think on the 15th practical we will be dressing Bugs Bunny. @##$^&. I'd be in hell. But anyway Chef was happy with my performance. Everything was fast, I thought I won't be able to go to degustation part but oh well, I finished right on time.

Went right back to O'Reilley's on a Thursday night with new people. It was a pool doubles night with people in the Pub. NENG ROI TIGER!!!

Cindy have lived in The Philippines for 3 years at South Forbes Park. Her husband was diplomat in Manila. Terrence is American-Thai and could do a good imitation of PINOY ENGLISH ACCENT. You would actually believe it. Felix is South African-Taiwanese who speaks fluent Mandarin. I freaked out when I heard it first. Then Johann is Irish-Indian who grew up in Mumbai. He's a walking karaoke.

Saturday was the FUNNEST day ever, I thought I was going to be alone. I was at Erawan mall to check out Club 21 and check out Comme Des Garcon's new collection. The Margiela stuff they had were okay. But I almost got this Raf Simons shoes which is on a 60% discount. GOOD THING IS, I didn't have a size. Thanks to my fat feet, you just saved my wallet and my conscience. haha. But this is what I am excited about!

and it's gonna be Chinese New Year next week! Same day as to Valentine's day

So after and everything being lonely and shit and all that, FINALLY Bunny called me right after I just came back from Paragon to my Apartment. NICE BUNNY. So I went back to Paragon to meet up with Terrence and Bunny to try this Japanese place at Sukhumvit and oh well we saw a ready made PUFF PASTRY for 75 baht!!! fuckitfucklife.

You would think that it's something, but they're talking about dogs. :p

and this is gonna get better, we went to Khao San road just right after the National Stadium. Tip: if you're a farang (foreigner) then I suggest you go with someone who looks like Asian enough. Taxi people just take advantage of you and won't let you go by meter. BEEATCH.

So yes we went to Khao San Road. So many tourists and of course you get to know new people as well. People are just as nice as everyone. And they've got vodka buckets! We stayed at this roof top place just along the road. It has a live band that plays everything 90's 80's. Cranberries, Oasis, Korn and even Aretha Franklin songs. It's just too awesome to be inside. I wanna go back. We met up with Johann and Felix and just came home @ 5:30 am. This week's FUNNER that the last.

We had 4 of that and Felix is trying to convince Terrence to have more bucket of Mojitoi wouldn't believe if this is the club's bouncer. he's been around the roof top place.... AWEZUM.they even bothered trying cricketsKHAO SAN state of mind haha.
